What is Gluten

My Experience with Gluten

 I dont know how many times I heard people say oh I have a problem with gluten. I didnt even know what it was most of the time other then it meant stuff I loved like BREAD.  I could eat a whole loaf of nice italian bread at a sitting. I never felt bad after it....so how could I have any problems with gluten. Well I decided to get rid of it for my 2nd month of P90x and thats when my energy skyrockted. I replaced it with other carb sources like fuits and vegetables. I never knew how sensative I was to gluten till I removed it.  After I finished P90x I still wasnt convinced that I had any major gluten issues and maybe I could have it a few times a week. Well I reintroduced it after 2 months and boy did I feel it.  Not after one meal...not even two...but by the 3rd meal on the 3rd day my stomach was in agony. I was running to the bathroom and had such stomach cramps. I knew then while not totally destroyed by gluten...I was sensative to it and was best to save it for a cheat every once in a while. A single meal occasialnly....there are lots of gluten free options now and on weekends with breakfast have gluten free low gi bread made out of eggs and almond meal and the taste is the same. All I really missed was the texture. I mean when was the last time you ate plain bread. Its usually a carrier for something else we like better.  Try it and see how you react.
